If anyone likes it HOT it’s me.
I have always had a hankering for spicy food but I can thank our old neighbors Rita and José for my obsession with eye watering, borderline hell, flavorings.
They said I could “out Mexican any Mexican.” And to this day vivid green Habenaro sauce is a staple in my fridge…I have been known to carry it around with me in my purse!!! I can’t hardly eat pizza without red pepper, I even put Habenaro on my pizza and if you want to see my throw a real hissy then don’t throw in enough oily red pepper sauce for my Crab Rangoon when I order carry out!
It looks like my kids are following in my footsteps. Both can eat spicier food than most adults. Yesterday Aidan ate a Kung Pao pepper our of the garden-most men would have cried and Amélie bites into Jalapenos fresh out of the garden and eats Thai food with such enthusiasm – she is 19 months old and already says, “Spithy!”
I love Farm food, I love French food but after a few days without spice I am desperate for it. Her are a few recipes that do the trick…
Gramma’s White Enchilada’s
Someday perhaps I will share Joel’s Margarita recipe – Just about the only thing I CRAVE while pregnant.
So not fair.

I am not sure if this is really how she did it – I just know there was meat, some sort of Campbell’s soup and green chili’s involved. (Campbell’s soup creeps me out – it’s so congealed and funky but it does the trick here). Here goes-
You will need:
Hamburger or Turkey meat
Cumin
Chili Powder
Green diced Chili’s
4 or 5 Cans of Campbell’s Cream of Celery
One large can Pinto Beans
Lettuce – good old, lame Ice burg
Crunchy Enchilada shells
Mexican Crumbling Cheese or Mexican Blend Kraft type cheese
Sour Cream
and Habenero if you dare.
This amount fed the four of us 2.5 times over the course of a few days.
Directions:
Fry up some turkey or hamburger meat
Add tons of Cumin, Chili Powder and one small can of diced green chilies found easily in the “Ortega” aisle.
Add four cans of Campbell’s “Cream of Celery”
Simmer the pinto beans in their own pot for 10 minutes and then add to the mix.
Simmer and stir until everything has a chance to really infuse!
In individual low bowls make a bed of lettuce and lay a enchilada shell down, cover with the sauce, add Mexican blend yellow cheese or even better, authentic Mexican crumbling cheese. A dollop of sour cream (from the Mexican store is even better) and if you are brave, add a little Habenero sauce!
I made this for the family the other day and before I knew it the kids had SHOVED their empty plates across the table begging for more!!!

I found this great, easy recipe at Getting Freedom — not only is she a die hard Dave Ramsey girl but this was so easy we are sure to enjoy Jalapenos all winter!
Don’t use all yours though…in a few weeks I will share with you our neighbor, Mr. Mikes Jardiniere recipe!!!! Talk about slathering something all over your pizza!!!

And last but not least my own to die for…
Poblano and Chihuahua Cheese Tacos


You will need:
A little oil
4-6 Poblano Peppers
One large round of Chihuahua Cheese
Soft Corn Tortillas
One Large Can of Pinto Beans
One can of Beer (more if you’re gonna drink it!)
Cilantro
And Habenero Sauce if you dare
Wash and then julienne your Poblano Peppers and rinse again to get rid of any seeds. (If you didn’t grow them, rinse them very well as peppers are heavily sprayed for bugs!)
In a frying pan heat about a tablespoon of oil and add your peppers. Sauté them for 5-10 minutes. Add strips of the Chihuahua Cheese and mix until thoroughly melted. At the same time after opening your beans drain off almost all the liquid and pour into a sauce pan on medium heat. If you are not shy about the added fat they are very good cooked in a little bacon grease. Add a half can or bottle of bear and some chopped cilantro and cook until they are mashable. We just mash ours a little with a fork so they are half mashed, half not. You won’t believe how good the beer makes them taste and if you are still buying “refried beans” well, shame,shame, shame! Once you try these you will never go back to the ones that look like dog food!
In a low heated oven place your tortillas on the racks for a few minutes until softened. Take them out and you can then wrap them in a clean dish towel to keep warm.
Assemble your peppers and melted cheese in the taco with your beans on the side or in the taco and ENJOY!!!
In this house Momma gets the rights to scraping off any browned cheese from the frying pan – Yugh-um!!!!
And now…for the really hot stuff! It’s the weekend and it’s hot out so what better way to cool of tonight after the sun goes down than with a plate of Mexican food and a great movie. May I recommend…Some Like it Hot. A mon avis (in my opinion) one of the top five funniest movies of ALL TIME! We watched it for the first time in a couple years and with tears streaming down our faces the other night with laughter as we said our favorite lines along with Geraldine, Daphne and Sugar. The film is SHEER GENIUS! So much so that you may need to watch it a couple times to catch every crack up! Marilyn is my favorite off all time and so is Jack Lemmon – with Some Like it Hot you can not go wrong!!!
