Making pesto is easier than you think

Recipe type: Sauce
Cuisine: Italian
  • Three or four big handfuls of fresh basil leaves
  • 3-5 garlic cloves depending on your garlic addiction
  • Half cup or so of fresh parmesan cheese (romano blend is my preference)
  • ½ cup - 1 cup extra virgin olive oil (depending on how runny you like it)
  • Large handful of walnuts (Pine nuts if you're feeling decadent)
  • Salt to taste
  1. Whiz everything in food processor until desired consistency
  2. Pack in pint jars with ½ inch headspace
  3. Freeze
  4. Keeps for well over a year
