Oh, In honor of the Tea Parties scheduled around the country I would like to share this amazing recipe with you! While we conservatives are usually busy being productive instead of protesting I do hope that many of you will take the time to find an April 15th Tea Party in your area. Sadly, I’ve never physically protested anything in my life and I am looking forward to doing SOMETHING to make a little noise over our soon-to-be-full -blown-Socialist state. I imagine a full blown tax revolt would be more effective but I don’t think we pampered Americans have the grapefruits to support one of those yet. Maybe when we are being taxed 85% of our income we will finally wake up…OK, OK, I’ll get to the recipe. Stepping off my soapbox now…
What goes better with Tea than a Scone? I have been enjoying one or two every morning with a piping hot cup of English Breakfast Tea (I have been saving my tea papers to send to the White House today!).
This makes 24 Scones. Simply throw them in a ziplock and freeze them. To serve, turn your oven to 350 and lay them on a rack until toasty and warm. As usual, I tried to use as much organic as possible.
You will need:
-Self control. Try not to eat every single one before your man gets home.
Look, if I managed not too than you can too!
-4 Cups all purpose flour, preferably organic and non-bleached, plus a quarter cup or so if you find your batter too sticky/runny at the end from the blueberries. I prefer to not use dried Blueberries in my baking so my recipes can get a little watery if I don’t keep an eye on them.
-1/2 cup organic sugar (cane juice)
-1 Teaspoon salt
-4 Teaspoons baking powder
-1 Teaspoon baking soda
-2 Sticks of cold organic sweet cream butter or homemade butter =ing 8 ounces, cut into pieces
-1 1/2 Cups Buttermilk (I can never find Organic Buttermilk) plus two tablespoons or so for brushing
-1 Cup of Blueberries (thoroughly drained if you are using thawed from frozen berries)
-Cinnamon/sugar mix for sprinkling
If you would to make Lemon/Blueberry Scones simply add the following:
1-2 Tablespoons Lemon juice
1/8-1/4 Cup grated Lemon zest
-A pinch more flour if you find your batter too runny or you can leave out the lemon juice
Preheat oven to 400. In a food processor mix your flour, sugar, salt, baking powder, soda and lemon zest if you are using it. While it’s running drop your pieces of butter in. I make my pieces the size of a tablespoon or so. Pulse until the mixture becomes mealy and then slowly pour in your Buttermilk (and Lemon juice if needed). A bigger clump will start to form. At this point you can take your batter out and put it into a bowl so that you can gently add your Blueberries. (This can all be done by hand or with a pastry masher but I have a love affair with my Cuisnart.)
Now I know, many like their scones in the traditional triangle shape but this is the Parisienne Farmhouse and so most of my recipes have a “rustic flair” and I like my little Scones to resemble a biscuit more than finger food for High Tea at the Drake. However, if you are having the ladies over and want a more formal look simply pat your dough into a circle and cut them with a pastry cutter. I don’t have one so I could not do that if I wanted…I wonder if a knife would suffice??
Transfer your little wonders to a greased baking sheet and paint them with your remaining butter milk. (This is why it is handy to have a clean, only-for-cooking paint brush in one of your kitchen drawers). Sprinkle them with your Cinnamon/Sugar combo and bake for about 15 minutes.
For a real M.O. spread a little Lemon Curd and wipe the tears of joy from your eyes as you enjoy this delight that you made! These put those dry, crumbly horrible things at Panera and Starbucks to shame. Besides, you can make 24 or so for the cost of 3 or 4 of one of those and even though our President is taking 500 people with him to Europe the rest of us need to practice “fiscal responsibility” and “make sacrifices”.
